Burrito night recipes!

There has been some suggestions of uploading the recipes from the burrito night last week.  After careful thought, I’ve decided to release the secret recipes for your enjoyment!


Mexican Rice with Coriander Sauce

1 tablespoon (Tbsp / a big spoon) olive oil
1 Lg onion, chopped
4 garlic cloves, chopped
1 Tbsp chopped chili peppers
2 cups rice 3 1/4 c. chicken broth
3/4 teaspoon (tsp. / a small spoon) salt

* Heat oil
* Add onion, garlic, and peppers; saute till all are cooked – ~9 mins.
* Mix in rice; stir constantly for 2 mins; ensuring that all rice is coated with oil and veggies
* Pour in broth and salt; bring to a boil
* Reduce heat to low
* Cover; cook 15 mins
* When finished, put in refrigerator until chilled; Bring out at least 1 1/2 hours before serving.

Sauce
1 1/4 cup chopped coriander (cilantro)
1 cup oil
5 Tbsp white wine vinegar
2 garlic cloves
1 tsp cumin
1 tsp chopped peppers

* Combine all in food processor (or whisk well in a bowl if don’t have)
* When ready to serve, pour over rice

Avocado-Lime Chip Dip
2 Avocados
2/3 cup chopped red onion
2 chopped garlic cloves
2 tsp. chipotle chile sauce (or worcestershire/steak sauce if don’t have)
1 tsp. salt
1/2 tsp cumin
2 1/2 cups yogurt
1/4 cup chopped coriander
3 tsp. lime juice
1/4 cup salsa
Bag of tortilla chips

* Combine all and mix well in a large bowl
* Tastes great in burritos as well as for a chip dip

Fajita Steak
2 skirt steaks (thin steak meat)
1/2 cup lime juice (~4 limes)
1/2 cup chopped coriander
2 tsp. chopped jalapeno peppers
2 tsp. chopped garlic
2 tsp. oil
1 tsp. cumin
3/4 tsp. salt and pepper

* Slice steaks lengthwise and then in half; put in a sealed bag
* Combine all other ingredients in a bowl; mix well
* Pour marinade over steak; leave bag in refrigerator overnight

Fajita Chicken
4 Chicken breasts (boneless/skinless)
1/4 cup ketchup
2 Tbsp. honey
2 Tbsp. soy
2 Tbsp. lime juice
1 tsp. salt and pepper

*Do same as steak and keep in a separate bag; leave in refrigerator for 6 hours

Fajitas
2-4 cups diced tomatoes
2 or 3 large onions; strips
1 red, yellow, and green bell pepper
16 tortillas
salsa
2-3 cup sour cream
2-3 cup Monterrey Jack cheese
*** Marinated Steak and Chicken ***

* Start by sauteing Steak and Chicken until cooked through; can do together or separate; when cooked, turn heat to low
* Saute onions and peppers until browned
* Start warming tortillas in microwave or over heat of steak and chicken pan
* Put onions and peppers, chicken and steak, and each other ingredient into separate bowls.
